Sweet & Hot Grainy Mustard

 

1/2 cup yellow mustard seed

1/2 cup brown mustard seed

1 ½ cups sherry vinegar

¾ cup brown sugar

1 tsp turmeric

1 tsp kosher salt

 

Soak the mustard seeds in the sherry vinegar in a jar on the counter overnight. Strain out excess liquid into a blender and add 1/3 of the soaked mustard seeds. Blend on high until smooth. Add the pureed mustard back to the soaked mustard seeds. Stir in the sugar, turmeric and salt. Refrigerate for 3 days before use, this will allow flavors to come together.

 

This recipe produces a very flavorful mustard with a nice balance between heat and sweetness. For a spicier mustard reduce the amount of vinegar and sugar.
